For those who are not aware, my father was diagnosed with Celiac Disease several years ago, which means he’s basically allergic to a substance called gluten which is found in all wheat products. If you started reading the packages in grocery stores you would discover that you can eat next to nothing!!! It is very sad :(
Slowly, one by one, his children are falling victim to the same disease – and I have caught the bug! Some days I feel like I can’t eat anything, and others, like yesterday, I eat something I think is safe, only to find out a few hours later that, it was not kosher. Monday, I went grocery shopping and bought a big bag of almonds, because I live on them (they make great snacks, and I LOVE to chop them up and put them in my yogurt in the morning and it is something I can eat!). I got the bag from Wal-mart instead of Target like I usually do, because it was late and I didn’t want to make the 2nd stop, & I just wanted to go home. I started munching on them Wednesday night and noticed that I was a little bloated, but I thought it was because I had one of my father-in-law’s onion rings, which is definitely on my taboo list. I had a hand full of almonds before I went to bed and when I woke up Thursday morning I was uber bloated and stayed that way all day long. We’re talking my stomach was extended 2 inches! And my clothes were not comfortable, I didn’t like standing, and sitting was a pain! Of course, I was munching on my almonds all day and it hit me this morning that those almonds must have been processed on machinery that also processed wheat products and that’s why I was in so much pain. So, I haven’t eaten any today, which is very sad, because I love almonds, but no tummy bloat and I’m feeling much better. Therefore, food allergies really suck big toe!
Sorry to hear about your food allergies. I knew someone with this condition, and we would grind oatmeal to make flour to make baked goods for them. You've probably heard that before, but that way you can still enjoy some baked goods. He also ate a lot of fruit and veggies, which is pretty healthy for you. I'd probably eat a lot better if I HAD to... not to say that I would enjoy it all the time though. Sorry that you can't eat a lot of your favorite foods anymore!
